Last year I had bought some pumpkin chipotle pasta sauce and was waiting for the right time to try it out. Finally put it to use and paired it with some protein pasta, chipotle and Monterey Jack chicken sausage (from Walmart) and arugula. Such a great combo. The sauce and the sausage complement each other really well and I’d absolutely buy both again. I also made some little challah roll friends to go with because I mean….i had to.

... Read moreWhen I first tried the pumpkin chipotle pasta sauce, I was intrigued by its spicy, smoky notes balanced with a subtle sweetness. Pairing it with protein pasta made the meal both hearty and nutritious, adding extra sustenance without compromising on flavor. The chipotle Monterey Jack chicken sausage from Walmart adds a creamy, spicy touch that melds perfectly with the sauce's depth. Adding fresh arugula not only provides a peppery contrast but also brings a pop of vibrant green to the plate, enhancing both texture and appearance. I love incorporating seasonal ingredients and savoring the essence of fall in my dishes; this recipe captures that feeling wonderfully. The homemade challah rolls are a must-have side here. Their soft, slightly sweet bread is ideal for scooping up the rich sauce and complements the savory sausage and spicy kick. Making your own rolls adds a personal touch and fills the kitchen with an inviting aroma. If you’re looking for ways to elevate this recipe further, consider sprinkling toasted pumpkin seeds on top for extra crunch or a dash of freshly grated Parmesan cheese for richness. This dish is flexible and perfect for cozy dinners or casual gatherings, bringing warmth and comfort during cooler months. The fusion of flavors in this pumpkin chipotle pasta is unique yet comforting—definitely something I’ll make again and recommend to friends craving a taste of autumn.
