Since I’ve been rewatching Gilmore girls it inspired me to make some other Gilmore girls foods. Sookies peach sauce has been one of the things at the top of my list. Paired with waffles of course. For anyone interested I will post my peach sauce recipe below!
Sookies peach sauce
- 1 can peach slices, drained
- Few tbsp water
- 1 tbsp brown sugar
- Splash maple syrup (not too much otherwise in the words of sookie it’ll strangle the fruit)
- Pinch cinnamon, cardamom, and nutmeg
- Splash vanilla extract
- Splash almond extract
- Optional cornstarch slurry to thicken it up
In a small pot add peaches, water, maple syrup, brown sugar, and spices. Heat over medium high and let cook for a few minutes until the peaches start to break down. Use a masher, fork, or immersion blender to break down the fruit. Continue to cook over heat until it continues to thicken. I wanted mine a little thicker in consistency so I also added a cornstarch slurry (cornstarch mixed with water). Once thickened to your liking remove from heat and add vanilla and almond extract. Let cool then use to top waffles, french toast, pair with ice cream, etc.

This sauce is a great example of how simple ingredients can create a flavorful and comforting dish, especially during fall when you want something warm and sweet.
