🧀🥦 Cheddar Cauliflower and Roasted Garlic Soup with Cheesy Toast 🧀🥦

Ingredients:

For the Soup:

1 medium head of cauliflower, chopped into florets

1 bulb garlic

2 tablespoons olive oil

1 small onion, diced

3 cups vegetable or chicken broth

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

½ teaspoon smoked paprika

½ teaspoon ground mustard

½ teaspoon salt (plus more to taste)

½ teaspoon black pepper

Optional: chopped chives or parsley for garnish

For the Cheesy Toast:

4 slices of crusty bread

½ cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 tablespoons butter, softened

Instructions:

Roast the Cauliflower and Garlic:

Preheat your oven to 400°F (200°C). Spread the cauliflower florets on a baking sheet, drizzle with olive oil, and season with a pinch of salt and pepper. Slice off the top of the garlic bulb, drizzle with olive oil, wrap it in foil, and place it on the baking sheet. Roast for 25-30 minutes, until the cauliflower is golden and tender and the garlic is caramelized.

Sauté the Onion:

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened and fragrant.

Blend the Soup:

Add the roasted cauliflower, squeezed roasted garlic cloves, and broth to the pot. Use an immersion blender (or transfer to a countertop blender in batches) to puree the soup until smooth.

Simmer and Add Cheese:
