They are perfect for a quick breakfast, a light lunch, or even a fancy dinner if you get creative with the fillings! Let's start with the base – a perfect, thin crepe. Here's my go-to simple recipe for a basic savory crepe batter: Ingredients: 1 cup all-purpose flour 2 large eggs 1/2 cup milk 1/2 cup water (or more milk for a richer taste) 1/4 teaspoon salt 2 tablespoons melted butter (plus extra for greasing the pan) Instructions: In a large bowl, whisk together the flour and salt. In a separate bowl, whisk the eggs, milk, and water. Gradually add the wet ingredients to the dry ingredients, whisking constantly until the batter is smooth and lump-free. Stir in the melted butter. Cover the bowl and let the batter rest in the refrigerator for at least 15-30 minutes. This resting time is key to getting that perfect tender texture and helps prevent the crepes from tearing. Now for the fun part – the fillings! This is where you can really get creative and experiment with different savory crepe ideas.
