3 large eggs

1/4 cup butter or coconut oil, melted

1/2 cup honey or agave

1/4 cup plain Greek yogurt

1 Tablespoon vanilla

2 cups almond flour

2 1/2 Tablespoons tapioca starch

11/2 teaspoons baking powder

1/4 teaspoon salt

1-2 cups frosting (optional, to taste)

Instructions

1. Preheat the oven to 350 Fahrenheit.

2. Line a 12-cavity cupcake tray with liners and set aside.

3. In a mixing bowl or bowl of a stand mixer, beat together the eggs, coconut oil or butter, sugar, greek yogurt, honey, and vanilla.

4. Beat in the almond flour, tapioca, baking powder, and salt until smooth.

5. Scoop into the prepared cupcake tray, filling each about 2/3 way up.

6. Bake for 18-24 minutes (or until a toothpick comes out clean,
