I’ve been experimenting, and I have a fantastic low-carb churro recipe that surprisingly hits all the right notes without derailing your progress.
This isn’t your traditional fried churro, but it delivers on that warm, cinnamony, sweet crunch we all love. It’s perfect for those evenings when a protein bar just won't cut it, and you're dreaming of something indulgent. My Go-To Atkins-Friendly Baked Churro Bites Recipe:
Ingredients:
1 cup almond flour (super-fine works best!)
2 tablespoons coconut flour
1/4 cup erythritol or monk fruit sweetener (or your preferred low-carb sweetener)
1 teaspoon cinnamon, plus more for coating
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/4 cup unsalted butter, melted
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract
For coating: 2 tablespoons melted butter, 1/4 cup erythritol, 1-2 teaspoons cinnamon
Instructions:
Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat. If you have a piping bag with a star tip, grab it – it makes them look authentic!
Dry Mix: In a large bowl, whisk together the almond flour, coconut flour, sweetener, 1 teaspoon cinnamon, baking powder, and salt.
Wet Mix: In a separate medium bowl, whisk the eggs, melted butter, almond milk, and vanilla extract until well combined.
Combine: Pour the wet ingredients into the dry ingredients. Mix well with a spatula until a thick dough forms. It should be firm enough to pipe.
Pipe (Optional but Fun!): Transfer the dough to a piping bag with a star tip. Pipe 2-3 inch long churro shapes onto your prepared baking sheet. If you don't have a piping bag, you can just roll the dough into small logs.
