✨ Ingredients (1 big OMAD/ one meal a day bowl) or make it 2 servings
For the Korean glazed meatballs:
• 8 oz ground chicken
• 1 tbsp soy sauce (or coconut aminos)
• 1 tsp garlic powder
• 1 tsp ginger (or ½ tsp ground)
• Salt + pepper
• 1–2 tbsp green onions
Sticky glaze:
• 2 tbsp soy sauce
• 1 tbsp honey (or sugar-free alternative)
• 1 tsp sesame oil
• 1 tsp rice vinegar
• ½ tsp garlic (minced)
• Optional: pinch of red pepper flakes
Corn cheese:
• 1 cup corn (drained)
• 2.5 oz mozzarella cheese
• 1 tbsp light mayo
Base:
• 1 bag cauliflower rice
• Salt + garlic powder to taste

1. Make the meatballs
• Mix ground chicken + seasonings
• Roll into small meatballs
• Air fry at 375°F for 10–12 mins or pan cook until done
2. Make the glaze
• Add all sauce ingredients to a pan
• Let it simmer until slightly thick
• Toss cooked meatballs in the glaze until coated + sticky
3. Corn cheese
• Heat corn in a pan
• Mix in mayo then mozzarella
• Let it melt into that creamy, cheesy goodness
4. Cauliflower rice
• Sauté with salt + garlic powder until hot and slightly dry
5. Build your bowl
• Cauliflower rice base
• Sticky Korean meatballs
• Corn cheese on the side
• Top with green onions + sesame seeds
