... Read moreOkay, so you've seen my super easy 3-ingredient pizza pockets, right? I swear, they've become a total game-changer for my weekly meal prep, especially when I'm thinking about quick lunches that actually feel satisfying. You know those days when you're scrambling for something to pack for school or work, and you just want something delicious without all the fuss? These pizza pockets are exactly that. What I love about them is how versatile they are. While I usually stick to pepperoni and string cheese, you can honestly put almost anything inside! Thinking about those 'school lunch Mexican pizza' vibes? Why not try a Southwestern twist? Swap the pepperoni for some seasoned ground beef or black beans, add a sprinkle of taco seasoning, a bit of corn, and maybe some shredded cheddar instead of just mozzarella string cheese. It's not a traditional Mexican pizza, but it’s a fun, portable, and equally delicious pocket version that kids (and adults!) will totally love. It's all about making these pockets your own! Let's talk about the ingredients for a second. The Pillsbury Grands! biscuits are key here – they puff up so beautifully and create that perfect golden-brown crust. And for the cheese? I'm a huge fan of using string cheese. It's just so convenient; no grating needed! I often grab the Happy Farms string cheese from Aldi, which honestly works perfectly and melts gorgeously inside. But really, any brand of string cheese will do. You could also use a mix of cheeses if you have them on hand, like a little cheddar for extra flavor. For those looking for 'Aldi mozzarella sticks cooking instructions,' while these aren't mozzarella sticks, the ease of using Aldi's cheese products definitely carries over. Using string cheese in these pockets gives you that perfectly melty, gooey center, much like a good mozzarella stick. Beyond the base recipe, I've picked up a few tips over time to make these even better. When you're sealing the biscuits, make sure you pinch the edges really well to prevent any fillings from leaking out during baking. A fork can help crimp them securely. And while the recipe says to bake for '13 min' at '350F,' ovens can vary, so keep an eye on them until they're golden brown and puffed up. Don't forget that crucial step to 'LET STAND FOR 5 MINUTES' after they come out of the oven – it helps them set and prevents you from burning your tongue on hot cheese! These are fantastic for meal prepping. I often bake a big batch and then let them cool completely before storing them in an airtight container in the fridge. They reheat wonderfully in the microwave for a minute or two, or you can crisp them up in an air fryer for 3-5 minutes at 350F. They’re super convenient for a quick snack or a packed lunch. Seriously, 'save this and try it yourself!' You won't regret having these delicious and easy 'PIZZA POCKETS' ready to go.

Tips on sealing the biscuits? When I made something similar almost all of them opened in the oven.
