Why is the color of bread different?

Besides different colors, the texture is also different. Even the quality of eggs, or some bakers choose to use yolk to replace whole eggs for a stronger taste, all make the color of bread different.
In addition to raw materials, the technique is also effective. Bread that is fermented for a long time (actually fermented), the enzyme has a greater chance of digesting flour, which is digested into sugar, and sugar when heated, reacts. Maillard makes the bread brown (browning). Therefore, the more fermented, the darker the color.
