A ✨SIMPLE✨ Breakfast Taco🌮

If I need a quick and easy breakfast, these tacos are always my go to.

Slightly fry the corn tortilla in some oil until slightly crispy yet still pliable, about 15-20 seconds per side.

Cook your eggs in that same pan with the oil where we cooked the tortilla. I liked to cook them in more oil than you think you need, making sure there’s enough oil in the pan to be able to spoon over hot oil on top of the eggs to help cook to egg whites while still have a perfectly runny yolk.

Slather your corn tortilla with warmed up refried beans, top it with the egg and some pickled red onions.

Perfectly simple yet so delicious!

You’ll want to have these for dinner too!
