Canning Mandarin Oranges

Have you ever found yourself with a pile of mandarin oranges leftover during the winter and wondered what to do with them before they go bad? Don’t let them sit there looking sad on the counter—let’s turn them into jars of golden goodness with water bath canning!

Start by peeling your mandarins and removing as much of the white pith as you can. It takes a little patience, but trust me, it’s worth it when you see those gorgeous, clean segments in the jar.

Next, whip up a simple syrup. You can go light (1 cup sugar to 4 cups water) or sweeter if you prefer. Heat the mixture on the stove until the sugar dissolves completely.

Now, pack your mandarins into clean, sterilized jars, leaving about 1/2 inch of headspace. Pour the hot syrup over the top until the fruit is completely covered, but be careful not to overfill. Use a small spatula or butter knife to gently release any air bubbles hiding in the jar, then wipe the rims clean so you get a perfect seal.

Place the lids and rings on your jars, tightening them just to fingertip-tight. Then, into the water bath canner they go! Make sure your jars are covered by at least an inch of water. Bring it to a rolling boil and process for 10 minutes (don’t forget to adjust for altitude if needed).

Once your timer’s up, carefully lift the jars out and let them cool undisturbed on a towel. You’ll start hearing those satisfying little pings as the lids seal—it’s the sound of success!

When winter feels endless, you’ll have these jars of sweet sunshine ready to brighten up your day. Add them to desserts, salads, or just enjoy them straight out of the jar for a treat that tastes like summer. You’ll thank yourself later!
