The cold weather is upon us! Whats better than a bowl of soup on a cold day! Heres a recipe for some Spinach & Tortellini soup!

Makes: 6 servings
Ingredients:
1 tsp. olive oil
2 garlic cloves, minced
1 can (14.5 oz.) diced tomatoes, undrained
3 cans (14.5 each) vegetable or chicken broth
2 tsp. italian seasoning
1 pkg. cheese tortellini (9 oz.)
4 cups baby spinach
shredded parmesan & pepper
Instructions:
1. In a large saucepan, heat oil over medium heat. Add garlic, cook and stir one minute. Stir in tomatoes, broth, and Italian seasoning and bring to a boil. Add in tortellini, bring to a gentle boil. Cook uncovered just until tortellini are tender, 7-9 minutes.
2. Stir in spinach. Sprinkle servings with cheese and pepper.

This looks soooo good. I LOVE a good warm soup especially during chilly season. It’s getting really cold now and it’ll probably show any minute. But I gonna try this soon!
