so far: The jar went through active fermentation, where natural yeast ate the sugar and created bubbles (and a little mess). This is the alcoholic fermentation stage which is totally normal! Now the bubbles have slowed and the apples are soft and mashed, which means Stage 1 is complete.

Next, the jar will sit covered with a breathable cloth for 3–6 more weeks as it turns into real vinegar. During this phase, a “mother” may form that’s the good bacteria doing their work. I haven’t been successful growing a mother so here to try again.

Additionally, resist stirring or disturbing the liquid too often to allow the bacteria to establish themselves. Once the vinegar has matured to your taste preference, you can strain it again and store it in airtight bottles for regular use.
