[Professional] Tomato sauce
[Italian Chef Teaches] Basic Tomato Sauce
[Ingredients for 2 people] Finished amount: about 250g
400 g canned whole tomatoes
Onions 40 g
1 clove of garlic
EXV Olive Oil 20g
Salt 2.5 g
[How to make]
1. Chop the onion. Remove the skin and shoots of garlic and chop it.
2. Strain canned whole tomatoes in a colander and remove the hard calyx and seeds.
3. Heat EXV olive oil in a pan and saute the onion and garlic.
4. When the onion is clear and the garlic is colored, add the canned tomatoes.
5. Let the whole thing blend in and simmer over low to medium heat for about 10 minutes to remove the water. Then turn off the heat, add salt and mix.
[Point]
* If you are too lazy to rub, use canned cut tomatoes.
* You don't have to fry the onions until they turn amber.
* If you do that, it will become the onion sauce. Let's fry it so as not to burn it.
* When boiling down, tomatoes bounce and the kitchen gets dirty, so if you cover it with a colander etc., you can save the trouble of cleaning ◎

このトマトソース、作っておくと本当に便利で「プロっぽい味」が一気に近づきます。私がよくやる“失敗しないコツ”と、パスタ以外の使い道をまとめます。 ■プロっぽく仕上げるコツ（隠し味より大事） ・トマト缶はホール派：加熱でおいしくなる品種のことが多く、煮詰めた時の甘みと香りが出やすいです。ヘタは硬いので、気づいたら除いておくと口当たりが良くなります。 ・玉ねぎは「飴色」までやらない：炒めすぎると玉ねぎの主張が強くなって、トマトソースというより“玉ねぎソース”に寄りがち。透明感が出たらOK。 ・にんにくは焦がさない：色づき始めたらトマトを入れて温度を下げるイメージ。焦げると苦味が出て、後から修正しにくいです。 ・塩は最後：煮詰める前に入れると塩分が濃く感じやすいので、火を止めてから混ぜ込むのが安定しました。 ■「トマト缶 何ミリ？」の目安 レシピはホールトマト缶400g。日本だと内容量400gの缶が一般的で、だいたい1缶＝この分量でOKです。カットトマト缶でも作れますが、裏ごし不要な代わりに仕上がりの質感が少し変わります。 ■トマトが跳ねる問題の対策 煮詰め中の“トマト噴火”は地味にストレス。私はフタを少しずらすより、ザルを上にかぶせてガードする方法が一番ラクでした。キッチン汚れがかなり減ります。 ■保存の目安（常備用） 粗熱を取って清潔な容器へ。冷蔵なら2〜3日を目安に使い切り、長く置くなら小分け冷凍が安心です。製氷皿や小さめ保存容器で1回分ずつ凍らせると、使いたい分だけ取り出せます。 ■トマトソースパスタ以外の使い道 ・鶏むね/豚こまのトマト煮：ソース＋水少し＋塩で煮るだけで主菜に。 ・ミートソースのベース：ひき肉を炒めてこのソースを足すと時短で本格寄り。 ・ピザトースト：パンに塗ってチーズ、黒こしょう。朝が楽になります。 ・魚のソテーに：白身魚を焼いて上から温めたソースをかけるだけ。 “隠し味”を足す前に、にんにくを焦がさない・10分しっかり煮詰める・塩は最後、ここを守ると味が決まりやすいです。次はこのソースで何を作る予定ですか？
