* 8 oz protein pasta (chickpea, lentil, or high-protein wheat)
* ½ cup diced red onion
* 2 cups fresh spinach
* 1 cup cherry tomatoes, halved
* ¾ cup heavy cream
* ½ cup grated Parmesan
* 2–3 tbsp chipotle sauce (to taste)
* 2 cups water or broth
* 1 tbsp olive oil
