TEX MEX POWER BOWL

I made this recipe as a batch for my meal prep so all of these ingredients make about 5 servings!! She is DELICIOUS!

1. bake about 4 chicken breasts as desired

2. Combine 1 chopped head of romaine lettuce, 1 red bell pepper, 1/2 pint of diced cherry tomatoes, 1/2 a medium red onion, 1 19oz can of black beans and 1 12 oz can of corn into a large salad bowl. You can store this as is or separate into 5 containers.

3. Chop up chicken to add into your salad WHEN you decide to have a bowl. (Don’t mix it in with the veggies until you’re ready to eat).

4. Add plain Greek yogurt (acts like sour cream but higher protein), salsa, Tex Mex cheese, and chipotle mayo to top off your salad as desired. Again, don’t add your toppings until you prep your bowl individually.
