🔶You’ll need:

🔸For the focaccia:

4g instant dry yeast

120ml water, warm

400g all-purpose flour

4g salt

4g sugar

230ml water, room temperature

Olive oil

🔸For the peach cobbler topping:

4 small yellow peaches, diced

45g sugar

45g brown sugar

45g all-purpose flour

4g ground cinnamon

2g ground nutmeg

50g unsalted butter, cold and cubed

🔸For the glaze:

35g powdered sugar

9g milk

🔶You’ll do:

1. In a small bowl, add the dry yeast and 120ml of warm water (you can microwave room temperature water for about 30 seconds), and mix well. Set it aside for a few minutes.

2. In a large bowl, add the all-purpose flour, salt, and sugar. Mix well. Next, add the yeast water and the 230ml of room temperature water, and mix until everything is combined. Drizzle enough olive oil to coat the top of the dough. Cover the bowl and let the dough rest in a warm place for about 30 minutes or until it doubles in size.

3. Wet your fingers, and fold the dough inward 4-5 times from all directions. Cover the bowl and let the dough rest for another 30 minutes or until it doubles in size.

4. Grease a 13 x 9 x 2” baking pan with olive oil, transfer the dough to the baking pan, stretch the dough out into a layer that covers the bottom of the pan, and let it rest in a warm place for another 30 minutes.

5. To make the peach cobbler topping, mix the sugar, brown sugar, all-purpose flour, ground cinnamon, ground nutmeg, and the butter until they turn into crumbs. Set aside.

6. Preheat the oven to 425°F. Sprinkle some more olive oil on the dough, place the peaches and then the crumbs evenly on top of the dough, and press your fingers into the dough so that the topping kind of sinks into it.

7. Bake at 425°F for 35-45 minutes or until the internal temperature reaches 190°F. Once the baking pan is cool enough to touch, transfer the Peach Cobbler Focaccia to cool.

8. To make the glaze, mix the powdered sugar and milk. Then, drizzle the glaze on the bread.
