Hojaldre de Tomate
I had another discounted roll of hojaldre and wanted to try something savory this time. This recipe called for crème fraiche which I’ve never used before but found a quick vegan substitute.
First I blended a cup of cashews, the juice from half a lemon 🍋, 1 tsp salt 🧂, and half a cup of water. I added half the water at first to make sure the cashews are really smooth.
Next I laid the hojaldre on a baking tray and spread the creme fraiche over it. I added slices of two kinds of tomatoes and some green peppers for color. I seasoned it with oregano and garlic powder but this would be the bomb with fresh basil 🌿.
I baked it for 10 minutes on high heat. Depending on the toppings and temperature of the oven it could take longer. Last I drizzled it with olive oil and cut it into squares.
I really enjoyed how this came out. My only regret is not planting basil in my garden so I can have some fresh sprigs on hand!
