写真を撮ってから気づいたんだけど、エビフライ定食って「刺身の盛り付け」がきれいだと満足度が一気に上がる。 えび庵の足赤えびフライ定食は、黒いお盆の上にご飯・味噌汁・刺身・小鉢・オレンジまでバランスよく並んでいて、見た目だけでテンション上がった。刺身って量そのものより、“どう置かれてるか”で「豪華感」が変わるんだよね。 私が「赤海老（足赤えび系）」や刺身の盛り付けで意識してるポイントはこんな感じ。 ・器は“平たい皿”より“少し深さのある皿” 赤海老は身がつやっと見えるから、深さが少しある器の方が立体感が出る。氷や大葉を敷くならなおさら。 ・赤い海老は“白い刺身”の隣に置く 赤海老だけ並べるより、白身（タイ系）やイカっぽい淡い色が横にあるとコントラストで赤が映える。結果的に「盛り付けが上手」っぽく見える。 ・頭や尻尾は“同じ向き”にそろえる 赤海老は頭付きだと特に映えるけど、向きがバラバラだと散らかった印象になりがち。2〜3尾なら、頭を同じ方向にそろえるだけで締まる。 ・薬味は“端にまとめる” わさび・生姜・大根つまが中央に散ると主役がぼやけるので、端っこに寄せるのが見やすい。大葉は仕切りにもなるから便利。 外食でも「次は赤海老の刺身をこう盛りたいな」って参考になるし、写真に残すなら、黒いお盆×刺身の色味って本当に強い。えび庵みたいにフライが主役の日でも、刺身がきれいに盛られてると“定食の格”が上がるので、刺身付きメニュー見つけたらつい選んじゃう。
