These keto cheddar cottage cheese biscuits have quickly become my go-to recipe for a savory, low-carb treat. I love how versatile they are—you can enjoy them fresh for breakfast, pair them with a salad for lunch, or serve them as a satisfying side with any low-carb dinner. The combination of full-fat cottage cheese and sharp cheddar not only adds rich flavor but also boosts the protein content, making these biscuits very filling and nourishing. One tip I discovered while making these biscuits is to blend the cottage cheese until completely smooth. This step is key to achieving that perfect soft interior texture without lumps. Also, combining baking powder, garlic powder, and Italian seasoning gives the biscuits a delicious herbal and slightly garlicky aroma, which complements the cheese beautifully. Using almond flour keeps the biscuits low in carbs but still tender. For those who prefer a dairy-free or nut-free variation, experimenting with coconut flour or seed flours might work but could require recipe adjustments for moisture and texture. I appreciate how quick they are to bake or air fry—just under 20 minutes. I usually air fry mine, which results in a wonderfully golden and crispy exterior, while keeping the inside moist and cheesy. Brushing a little melted butter on top right after cooking enhances the flavor and adds a lovely shine. For meal prep, these biscuits store well in an airtight container and reheat nicely in the toaster oven or air fryer. Adding fresh chopped parsley on top gives them a burst of color and freshness that’s also pleasing to the palate. Overall, these keto cheese cottage biscuits are a fantastic option for anyone following a low-carb or ketogenic lifestyle, or simply looking for a tasty, high-protein baked good. They satisfy cheese cravings while fitting into a healthy eating plan. I highly recommend trying them with your favorite savory spreads or alongside soups and salads.
