Easy breakfast/ lunch idea

Filling, finch in fiber and protein 🍳🥚🫑🥜🫛🌿

Sauté:

1 tsp oil

1/2 red onion

1/2 orange bell pepper

1/2 cup peas/carrot/corn ( all or just one works fine too)

When veggies are soft add:

2 egg whites ( I use yolks for baking or feed them ny cats)

1 whole egg

I like to scramble the whites but keep the yolk whole so it can ooze out on the dish 🫠

Salt and pepper to taste

Garnish with fresh herbs of choice. I used:

1/2 cup fresh mint

1/2 cup fresh cilantro
