Czech kolache 🥧🍑🍯
For 18 kolaches
Dough:
500g flour
80g sugar
1tsp salt
1 package instant yeast
1 egg
250ml milk
1 stick butter
1 egg for brushing
Filling of your choice. This one is apricot marmelade mixed with cinnamon, raisins, splash of rum and chunks of apricots or peaches.
Topping is mixture of butter, flour and sugar. Measure with your heart until the consistency is crumbly.
Recipe Instructions:
1. Microwave the milk with the butter until the butter is melted.
2. Let the mixture cool down slightly, then add the egg. Make sure the mixture isn’t too hot—ideally, it should be lukewarm to avoid cooking the egg.
3. In a separate bowl, mix all the dry ingredients.
4. Using a stand mixer with a dough hook, combine the wet and dry ingredients to create a dough. Knead for about 10 minutes. It’s okay if the dough is still a little sticky.
5. Cover and let the dough rise in a warm place for at least 1 hour, or until it doubles in size. (The warmer the room, the faster it will rise.)
6. Divide the dough into equal portions and shape them into small balls.
7. Use a small cup or shot glass to gently press and create an indentation or hole in the center of each ball.
8. Brush with a beaten egg.
9. Add your filling of choice into the center.
10. Sprinkle or spread the topping. Let the buns rise again for about 20 minutes.
11. Bake at 370°F (190°C) for about 17 minutes, or until golden brown.
12. Serve warm or reheat before serving.
