Turning one humble (and cheap!) sweet potato into a breakfast toast flight? Yes please.
Gluten-free and delicious, plus easily customizable, there is a lot you can do with this! I chose to make my toast flight the following (in order as above:)
- avocado, everything seasoning, hot sauce, egg, and tomato
- hummus, cucumber, arugula, red onion and fresh squeezed lemon with salt/pepper
- ricotta, cherries, drizzle of honey and sliced almonds
- peanut butter, apple slices + cinnamon
There are endless ideas for flavor combinations! A Latin American inspired toast, or maybe something Mediterranean. A poached egg instead of a fried one, or maybe it’s completely vegan and you add mung beans 🤍. Add banana slices, or maybe it’s another seasonal fruit. Maybe you even color code it — a green one, a blue one, yellow, a red one… I am obsessed no matter what. Find something you love and deeply enjoy it. 🥰
