High protein, aesthetic + healthy Greek spread! 🩷

On Wednesday’s, we wear (eat) PINK! 🩷 It goes with everything.

I love a pop of color in a healthy way, and pink radish pairs perfectly with a classic Greek tzatziki. To make this spread sing 🎶, here are a couple of tips I wanna make sure are included (also will be in the official recipe!):

- cucumber has a high water content, and could easily water down your spread. To help keep it from getting too liquid, start by grating your cucumber in its own bowl, then sprinkling on some salt and let it sit to the side. The salt will draw out moisture.

After a few minutes (where you’re likely grating the radish, and / or prepping other ingredients), strain the cucumber and as much of its liquid you can get in a cheese cloth or kitchen towel. The now strained cucumber can be added into the main bowl for assembly!

- fresh is best here when it comes to ingredients, but it will taste at its best after sitting for ~30 minutes in the fridge to let all the flavors meld together. It’s best to serve and enjoy immediately after this.

- as a vegetarian and not a vegan, my preferred yogurt is nonfat plain Greek yogurt, due to its higher sodium and low to no sugar content (plus, very high protein add!). If you’re opting for a plant based version, just make sure that your yogurt selection is also a low to no sugar content, to help keep this overall fresh and savory.
