Healthy & High Protein Breakfast Muffins
🍌🍞🥚🧑🍳 Seriously delicious and so easy! I either eat cold or microwave for 15 seconds with a a little grass fed butter!
Ingredients:
1 cups oats (can use quick or rolled)
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vanilla protein powder
2 very large overripe bananas
1 cup Greek yogurt
2 eggs
1 teaspoon vanilla extract
2/3 cup mini dark chocolate chip
Instructions:
1. Preheat oven to 350°F and grease or line a 12-cup muffin tin.
2. Blend oats in a food processor until finely ground.
3. Add remaining ingredients (except chocolate chips) and blend until smooth.
4. Stir in chocolate chips, reserving some for topping if desired.
5. Divide batter into muffin cups and bake for 20-22 minutes, until a toothpick comes out clean.
6. Cool completely before removing from the tin.
7. Store in fridge for 4-6 days
