Lemon Candy 🍋

Hey candy lovers! You know that feeling when you crave something sweet yet tangy? For me, it's always homemade lemon candy. I recently perfected an old-fashioned recipe that's so easy, you'll wonder why you ever bought them from the store. And guess what? You only need two ingredients! It's become a favorite activity for me and my crew, and the best part is, there are no artificial colors involved. Making these delightful lemon drops is simpler than you think. First, thoroughly wash your lemons. This is super important, even if you’re just using the juice, as you want everything to be sparkling clean. Next, cut each lemon in half and squeeze out all that fresh, vibrant juice. I usually aim for about half a cup to a full cup, depending on how many candies I want to make. Now, for the magic! Pour one cup of sugar into a heat-resistant bowl. Gradually add enough of your freshly squeezed lemon juice to just dissolve the sugar, making a thick paste. This initial step ensures an even mixture before heating. Once your sugar and lemon juice are combined, pour this mixture into a medium-sized pot. Place it over medium heat. The key here is patience! Bring the mixture to a rolling boil, and then reduce the heat slightly to maintain a steady, gentle boil. You'll need to stir constantly, especially as it heats up, to prevent the sugar from burning at the bottom. Keep stirring until the mixture starts to thicken and turns a beautiful golden brown color. This usually takes about 15-20 minutes, but keep a close eye on it! A candy thermometer is your best friend here, aiming for around 300-310°F (149-154°C) for hard crack stage, which gives you that perfect hard lemon candy consistency. As soon as it reaches the desired color and temperature, immediately remove the pot from the heat. Carefully pour the hot mixture into candy molds or onto a greased baking sheet with parchment paper. If you're using molds, work quickly as it sets fast! Let them cool completely at room temperature or pop them in the fridge for a few minutes to speed up the process. Once firm, pop them out of the molds, and voilà – your very own homemade lemon candy! Want to try a soft lemon candy instead? You can pull the mixture off the heat a little earlier, around 250-265°F (121-129°C) for the firm ball stage. For an extra zing, you can finely grate some lemon zest into the mixture before boiling – just a teaspoon or two for a burst of extra flavor. If you don't have candy molds, simply pour the mixture onto a greased baking sheet and score it into small squares or rectangles before it fully hardens. Once completely cool, you can break them apart. These are perfect for satisfying that lemon drop candy craving! To keep your homemade lemon candy fresh, store them in an airtight container at room temperature. If you live in a humid area, you might want to dust them lightly with powdered sugar to prevent sticking. They usually last for a couple of weeks, though I doubt they'll stick around that long in my house! Oh, and speaking of lemons! Don't throw away those leftover lemon peels! They're fantastic for making an all-natural cleaning solution. Just steep the peels in white vinegar for a few weeks, then strain, and you've got a wonderful, citrus-scented cleaner. It's a great way to reduce waste and keep your home sparkling clean, naturally!
