For a really long time and all through my singlehood before I got married, I would indulge in street food. it was like a middle alternative and between home cooked food and drive-thru junk.
Fast forward to pandemic times, I got a real wake-up. A realization about how much my habits were costing me. Not only financially but physically.
I started by cooking at home that would save money, and in turn, I would be eating healthier, or so I thought. even while being mostly indoors and seditary, I was so hungry and gaining weight so rapidly. This, in turn, manifested as depression and frustration. Later, life did its thing, and I got diagnosed with rheumatoid arthritis and an inflamed pelvis. I became bedbound. On any good day, I'm still under 5 ft, and I almost 380 lb my body can no longer support me.
With my former background, both a holistic practitioner and herbalist, I had to use my knowledge to pull myself out of this hole. I became enthralled, scouring the net, libraries online reports studies, etc. for research and knowledge. Medical journals, Ted talks, Zoom presentations, online speakers, research papers, and university databases.
While doing exercises to rehab myself. First laying in bed then, in a chair sit and be fit style. Later, then with resistance bands, each time I got stronger, I pulled my mind out of the depression by staying stimulated.
My motivation was to gain more knowledge on how to solve my issues. That's when I really started searching, to find information on why food made us sick on why, after the '70s and '80s, everyone just got super fat. Why did autoimmune inflammatory diseases start to exist? Why did we gain autoimmune deficiencies in the first place?
I came into knowledge about insulin resistance. I came into knowledge about what whole foods are. How food influences hormones, which regulate the function of the food process in the body. Where oil came from what cooking oil is. What is actually meant for cooking.
I realized that what I was eating was causing my issues, so It then became my quest to remake my life, my way of eating, my recipes, my habits, my food and my relationship with my body.
on the series you will see how I take my favorite comfort Foods my traditional foods and remake them to where they don't Spike my insulin they don't trigger my food sensitivities or my daughters tree and nut allergy. you see how I stretch a diamond to a dollar and day by day but progress into having the life I want. I introduced to you enmoladas. shredded chicken Upon A Nopal flaxseed chia seed tortilla. boiled shredded chicken sauteed in mole sauce made from guajillo & pasilla chile. A nut free version substituting sesame and peanuts for roasted pepitas and chia seed for almonds & bread crumbs.
