Healthy Apple Oatmeal Creme Pies 🍎

I made sliced cinnamon apples for my pancakes the other day and today I was feeling rather inspired to make another apple dish.

I’ve made chocolate air fryer cookies in the past, and changed them up to fit.

Oatmeal Cookies

- small banana (or applesauce)

- 1/2 cup quick oats

- 1 tbs syrup

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1/4 tsp cinnamon

I spooned the mix into four cookie shaped piles in parchment paper. I cooked them in the air fryer at 330 for about 14 minutes and then I flipped them to cook an additional 3 minutes.

* These can be baked in the oven if you don’t have an air fryer.

For the apple, I sliced it up thin and tossed the slices with cinnamon, stevia, and a splash of water. I cooked them in the microwave for 2.5 minutes.

Then, I made sandwiches with the cookies and apple slices, adding cream cheese in the middle.

It was so good! The cinnamon and apple go so well together and you get a bit of the creaminess of the spread. It’s satisfying and not too sweet.

Uhmmmm wow. This look ridiculously yummy!? How does the apple crunch/texture go with it… trying to be an oatmeal crème pie dupe.. does it help the cream cheese taste sweeter? I can’t wait to try these!!
