Spinach & Feta Quiche

I made a quiche for lunches this week and it was so much easier than I thought it would be! I found the recipe from OrganizedIsland.com but made a few modifications.

Ingredients ——

• pie crust

• 6 eggs

• 2 tbsp half & half

• 1/2 tsp salt

• 1/4 tsp pepper

• 1/4 yellow onion, chopped

• about 2.5 oz spinach

• 1/2 cup shredded cheddar

• 1/4 cup crumbled feta

• 1 tbs butter

I used a Pillsbury premade pie crust, but you can make your own or use a frozen one. If it’s frozen, it needs to thaw before you start.

I also used a 9 inch pie pan.

Preheat the oven to 350°. Poke holes in the bottom of the pie crust and pre-bake it for 10 minutes.

In a bowl, whisk together the egg, half & half, salt, and pepper. On a microwaveable plate, place the spinach and microwave until wilted, blot with a paper towel.

Take the crust out of the oven. Add the chopped onion, spinach, cheddar, and feta to the crust. Pour the egg mixture over it.

Thinly slice the butter and place across the top of the egg.

Bake until completely set, around 30 minutes.

Let cool and enjoy, or store in the refrigerator.

I sliced mine up into 5 pieces for lunches, to pair with a side of fruit or veggies.
