Perfect Side for Taco Night | Mexican Corn Cups
I made sheet pan tacos this week (also on my Lemon8 page!) and this was the perfect side dish to pair them with.
Ingredients ——
12 oz corn kernels (I used a frozen bag)
2 tbsp miracle whip
2 tbsp nonfat Greek yogurt
1 crushed garlic clove
1 lime, zested and juiced
1/4 tsp chili powder
1 tsp salt
2 oz queso fresco
1/4 cup cilantro, chopped, 14g
1 scallion stem, sliced, 18g
Cook the corn and let it cool.
Pro tip: Grilled corn or whole ears are great, but if you want something easy, get a 12 oz frozen, steam-in-bag corn.
Add the miracle whip, yogurt, garlic, lime juice and zest, chili powder, and salt. Mix together.
Add the corn, queso fresco, cilantro, and scallions.
Mix together and enjoy!
