Crispy Fried Cod Sandwich with Green Goddess Tartar & Slaw

FOR THE FRIED COD

Ingredients:

1½ lbs cod fillets (cut into 4 sandwich sized pieces)

1 cup buttermilk

1 tbsp hot sauce (optional)

Zest of 1 lemon

1½ cups all-purpose flour

1½ tsp baking powder

1 tsp smoked paprika

½ tsp garlic powder

½ tsp black pepper, plus pinch for buttermilk

1 tsp kosher salt, plus pinch for buttermilk

Neutral oil, for frying

Instructions:

Marinate the fish:

In a bowl, whisk together buttermilk, hot sauce, lemon zest, and a pinch of salt + pepper. Add the cod and let sit for 20–30 minutes.

Prepare the flour dredge:

In a shallow bowl, mix flour, baking powder, smoked paprika, garlic powder, salt, and pepper.

Fry:

Heat at least 2 inch of oil (but no more than halfway filled)

in a heavy skillet over medium high heat (355°F).

One piece at a time, let excess buttermilk drip off, then coat the cod thoroughly in the flour mixture. Press it in so it sticks. (Optional, let rest for at least 10-15 minutes to ensure coating sticks)

Cook 3–4 minutes per side until golden, crisp, and cooked through.

Transfer to a wire rack or paper towels.

GREEN GODDESS TARTAR SAUCE

Ingredients:

½ cup mayo

¼ cup Greek yogurt or sour cream

1 tbsp Dijon mustard

1 tbsp capers, chopped

Juice of ½ lemon

¼ cup fresh parsley

2 tbsp fresh chives

1 tbsp dill or basil

1 garlic clove

Salt + pepper to taste

Instructions:

Blend all ingredients except for capers, salt and pepper until smooth and bright green.

Add capers, taste and season with salt and pepper accordingly

Chill until ready to use. (Even better if made ahead.)

SLAW

Ingredients:

1 cup shredded red cabbage

1 Fresno chile or red bell pepper, thinly sliced for color

2 tbsp chopped cilantro

1 green onion, thinly slices

Juice of 1 lime

1 tbsp honey or agave

1 tbsp rice vinegar

Salt to taste

Instructions:

Mix all veggies in a bowl.

Whisk together lime juice, honey, vinegar, and salt.

Toss with slaw and let sit for at least 10 minutes to lightly pickle and soften.
