made a boat load of egg bites today for the week. mixed 12 eggs with a container of good culture cottage cheese, with salt & pepper. shredded a block of gouda cheese-poured the egg mixture over the shredded cheese in the muffin tin and baked. so simple and probably my favorite ones to date. s
