Chicken apple salad 🍎🍗🥗
From time to time, I love to make this yummy salad. The pieces of apple add a touch of sweetness 😋.
Steps on how to make are below:
1) Start by adding 4oz of chopped chicken to a bowl.
2) To the bowl add a tsp of garlic powder, a tsp of garlic powder, salt to your liking, and 2 tbsp of Greek yogurt.
3) Mix.
4) Add arugula to a bowl (make sure to wash).
5) Add the chicken to a pan and cook.
6) To the arugula add feta cheese 🧀.
7) Once the chicken is cooked, add to the salad.
8) Add pepita seeds to the salad. 🥗
9) Add thinly sliced apples to the salad 🍎 (I use a potato peeler to achieve this).
Add your favorite dressing if you want. I like adding lime 🍋🟩. Enjoy!
One of my favorite aspects of this chicken apple salad recipe is how it perfectly balances savory and sweet flavors along with a variety of textures. The use of Greek yogurt not only helps tenderize the chicken but also adds a creamy tang that complements the garlic powder and paprika seasoning. When cooking the chicken, I find that using chicken thighs works best for tenderness and flavor, but chicken breast can be a leaner alternative if you prefer. Make sure the chicken is fully cooked and slightly golden to add a nice sear flavor. Washing the arugula thoroughly is essential—its peppery bite contrasts beautifully with the sweetness of the apples. I love using a potato peeler to get those thin, delicate apple slices which blend well without overpowering each bite. Adding pepita seeds (pumpkin seeds) gives a pleasant crunch and a bit of nuttiness, which is a delightful surprise in a salad. The feta cheese brings a salty creaminess that ties all the ingredients together. For dressing, I usually like a squeeze of fresh lime juice as it brightens the whole salad without adding extra calories. However, this salad is versatile—you can dress it with a light vinaigrette or even a honey mustard dressing for more sweetness. This salad makes for a quick lunch or a healthy dinner, and it also stores well for meal prep. I’ve packed it for work lunches multiple times, and it’s always satisfying and fresh. Trying different apple varieties like Fuji or Gala can subtly change the flavor profile to keep it exciting. Overall, this chicken apple salad is a simple yet flavorful dish that I recommend for anyone looking to add more nutritious and tasty meals to their routine.
