Chicken pasta salad 🥗
I made a super delicious salad with pasta in it! It’s a game changer and makes you feel more full. Below are steps on how I made it:
1) Boil a serving size of your fav pasta.
2) To a bowl add romaine lettuce, feta cheese, & cranberries.
3) Add the cooked pasta to the bowl as well.
4) Next, cook 4oz of chicken thigh. Season with salt, black pepper, and garlic powder.
5) Add the cooked chicken to the bowl.
6) Add cooked corn to the bowl.
7) Add your fav dressing. I recommend the avocado lime dressing pictured above.
Enjoy!
I’ve always found salads with just greens a bit unsatisfying, so adding pasta to the mix truly transforms the dish into a more substantial and filling meal. Using romaine lettuce provides a nice crunch and fresh flavor that balances perfectly with the creamy feta cheese and the sweet-tart cranberries. One of my favorite parts is the chicken thigh because it stays juicy and flavorful when seasoned simply with salt, black pepper, and garlic powder. Cooking it right before assembling ensures it's perfectly tender. Adding cooked corn introduces a subtle sweetness and extra texture, making every bite interesting. For the dressing, avocado lime is a game changer in my opinion. It’s creamy without being heavy and the lime adds just the right amount of brightness. If you’re looking for a similar dressing, the Primal Kitchen Cilantro Lime or Avocado Oil dressings are great options that complement the ingredients wonderfully. This salad also offers great versatility. You can swap out the feta for goat cheese or add nuts like toasted almonds for crunch. Leftovers store well, making it an ideal meal prep option. I like to make a big batch, and it keeps me fueled and satisfied throughout the day. Overall, this chicken pasta salad is a perfect blend of protein, veggies, and carbs, suited for lunch, dinner, or even as a party side dish. Give it a try—you might find it becoming a favorite in your recipe rotation!
