... Read moreYou know those nights when you just want something incredibly delicious but don't have a huge plan? That was me when I whipped up this garlic butter salmon pasta, and let me tell you, it turned out to be an absolute winner! This dish is now firmly on my list of easy weeknight meals, and I just had to share how simple it is to make.
What makes this garlic butter salmon pasta so special? It's the perfect combination of flaky, pan-seared salmon, coated in a rich, aromatic garlic butter sauce, tossed with perfectly cooked spaghetti pasta. The whole thing comes together in under 30 minutes, making it ideal for a busy evening when you still want a hearty, homemade meal. The aroma alone as it cooks is enough to make your mouth water!
Here's how I put together my go-to Garlic Butter Salmon Pasta:
Ingredients:
2 salmon fillets (about 6 oz each), skin on or off
8 oz spaghetti pasta
4-5 cloves garlic, minced
4 tbsp unsalted butter
2 tbsp olive oil
1/2 cup chicken or vegetable broth
1/4 cup fresh parsley, chopped
1 tbsp fresh lemon juice (optional, but highly recommended!)
Salt and black pepper to taste
Red pepper flakes (optional, for a little kick)
My Super Simple Steps:
Cook the Pasta: First things first, get your spaghetti pasta cooking according to package directions. I like to salt the water generously – it really makes a difference in the flavor of the pasta itself. Drain it once it's al dente, reserving about a cup of the starchy pasta water. This is a crucial step for achieving a silky sauce!
Prep and Sear the Salmon: While the pasta cooks, pat your salmon fillets dry with paper towels. This helps get that beautiful golden crust. Season both sides generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Once shimmering, place the salmon skin-side down (if applicable). Cook for about 4-5 minutes until the skin is crispy and golden, then flip and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily. Remove the salmon from the pan and set it aside on a plate.
Make the Garlic Butter Sauce: Lower the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds to 1 minute, just until fragrant. Be careful not to burn the garlic! Pour in the chicken broth and let it simmer for a couple of minutes, scraping up any browned bits from the bottom of the pan to infuse maximum flavor into your garlic butter sauce.
Combine Everything: Add the cooked spaghetti pasta directly into the skillet with the garlic butter sauce. Toss well to coat. If the sauce seems a little thick, add a splash or two of that reserved pasta water until it reaches your desired consistency. Stir in the fresh parsley and lemon juice (if using).
Serve it Up! Gently flake the cooked salmon into large pieces and add it back to the pasta in the skillet. Toss lightly to combine. Serve immediately, perhaps with an extra sprinkle of fresh parsley or a dash of red pepper flakes for a bit of warmth. The image shows my creation in a white pan, garnished with dried herbs, and it truly was a feast for the eyes and the stomach!
This garlic butter salmon pasta is such a comforting and satisfying meal, yet it feels light and fresh. It's become my secret weapon for those moments when I’m craving something homemade and delicious without a lot of fuss. I really hope you try it – I promise you won't be disappointed!
