Making a Sushi Cake For My Bf’s Birthday 🍣🎂

🍚 Sushi Rice

2¼ cups sushi rice

2⅔ cups water

4½ tbsp rice vinegar

1½ tbsp sugar

1½ tsp salt

Cook rice, mix seasoning while warm, then cool to room temp.

🐟 Salmon Poke

9 oz salmon (¼” dice)

1½ tbsp soy sauce

1½ tsp sesame oil

¾ tsp chili oil

¾ tsp grated garlic

1½ tsp sesame seeds

1½ tbsp scallions

🐟 Spicy Tuna

9 oz tuna (¼” dice)

1 tbsp soy sauce

1½ tsp sesame oil

2 tbsp sriracha mayo

1½ tbsp scallions

Mix each and marinate 5–10 min.

Optional layers

🥑 ¾ avocado diced

🥒 ¾ cup cucumber diced

ASSEMBLY (10” springform pan)

Layer 1: 1¼ cup rice + furikake

Layer 2: spicy tuna (+ cucumber)

Layer 3: 1¼ cup rice

Layer 4: salmon poke (+ avocado)

Layer 5: 1–1¼ cup rice

Press each rice layer firmly. Chill 20–30 min.

Top with sashimi roses 🌹 sesame leaves 🌿 and tobiko/ikura. #sushicake #sushiathome #sushi #sushibake #sushilover
