One Pot Miso Butter Salmon 🫶

🍲 the crispy rice bottom is everything
🐟 1 large skinless salmon fillet (or 2 6-oz fillets)
🥣 2 tbsp white miso paste
🧈 2 tbsp unsalted butter, softened
🥢 1 tbsp soy sauce
🍶 1 tbsp mirin
🍯 1 tsp honey
✨ 1 tsp sesame oil
🧄 2 cloves garlic, grated
🍚 1.5 cups medium grain white rice, rinsed
🥘 2 cups dashi
🥢 1 tbsp soy sauce
✨ 1 tsp sesame oil
🧂 pinch of salt
🧈 2 tbsp unsalted butter (for the rice)
🥬 2 heads baby bok choy, halved
🍄 6-8 shiitake mushrooms, sliced
🧅 green onions, sesame seeds, furikake + chili crisp to top
1. Mix miso, butter, soy sauce, mirin, honey, sesame oil + garlic into a paste. Coat the salmon and marinate 15-20 min or overnight.
2. Add rice, dashi, soy sauce, sesame oil + salt to your nabe. Boil uncovered over medium heat 8-10 min until craters form
3. Melt 2 tbsp butter on the rice, then nestle in the salmon, bok choy + shiitakes
4. Lid on, low heat, 18-20 min for a large fillet (13-15 for smaller ones). No peeking!
5. Rest 3 min, then top with green onions, sesame seeds, furikake + chili crisp
6. Flake the salmon into the rice and scrape up that crispy bottom 🤤
