An Easy and Healthy Pasta Recipe 🥦

You should definitely try this this summer! My husband and I love this recipe and it’s definitely a great alternative to your classic marinara or alfredo. I originally found this recipe on Pinterest, but here is my personally revised version of this recipe that I love and found makes it better with substitutes + add ons! There are so many options for sides, but in the photo I had creamed corn for the side. Also good with a basic salad.

It takes ~35 mins to make in total

This easy broccoli pasta recipe is a perfect example of how you can enjoy a nutritious meal without complex cooking techniques. Start by boiling your preferred pasta until al dente and cooking a head of broccoli in salted water for about six minutes. This step retains the vibrant color and nutrients of the broccoli while ensuring it's soft enough to mix well with your pasta. Once the broccoli is cooked, reserve a cup of the broccoli cooking water. Combine olive oil and minced garlic in a skillet and sauté until fragrant. This creates a flavorful base for your pasta. Add the cooked pasta and broccoli to the skillet. At this point, stir in freshly grated Parmesan cheese, a pinch of salt, black pepper, and your choice of seasonings like oregano and paprika for an extra kick of flavor. For creamy texture, consider incorporating a tablespoon of almond milk or butter along with the reserved broccoli water to achieve the desired consistency. Let it all simmer for a few minutes, allowing the flavors to meld beautifully. This dish not only comes together quickly—around 35 minutes—but offers versatility with side options. Creamed corn is a fantastic accompaniment that complements the pasta perfectly, or a simple salad can add freshness. Enjoy this easy and healthy pasta dish that's bound to become a favorite in your household this summer!
