Easy & Healthy Kale Pasta Recipe

Ingredients:

• Kale

• Salt & pepper

• Lemon juice

• Garlic

• Olive oil

• Parmesan

• red pepper flakes (optional)

Directions:

1. Wash chopped kale. Cook in salted boiling water for approximately 5 minutes (or until soft)

2. In a separate pot, simmer garlic in olive oil. Once fragrant, remove and pour into a blender or food processor.

3. Remove kale from the water and add it to the blender/food processor with the garlic infused olive oil.

4. In the kale water, boil your pasta according to directions.

5. In the blender, add a generous amount of salt and lemon juice. Taste and adjust as needed. I added a little bit of pepper and red pepper flakes for flavor.

6. Blend until smooth.

7. When pasta is done, keep a little bit of the pasta water and add the blended kale pesto to the pasta. Mix well. Top with Parmesan cheese. Enjoy!

If you boil it for too long, it can become mushy and lose some of its vibrant green color and delicate flavor. Too short, and it'll still be a bit tough, potentially making your pesto less smooth and enjoyable. I always make sure to use a generous amount of salted water, just like you would for cooking pasta.
