... Read moreSince I shared my amazing success regrowing scallions right in my kitchen window, I've had so many people ask me how I do it! It's truly super simple, and the best part is seeing fresh greens sprout up again and again. For YOUR SCALLIONS, all you need to do is cut the white and light green parts, leaving about an inch of the white base intact with the roots attached. Pop these bases into a small glass with just enough water to cover the roots. Place it on a sunny windowsill, and you'll see new green shoots in just a few days! Remember to change the water every day or two to keep it fresh. Once they're about 6-8 inches tall, you can cut them again. I’ve gone through three cycles with the same batch, and it’s still going strong! But scallions are just the beginning when it comes to foods you can grow indoors from scraps. I'm always looking for new ways to make my kitchen more sustainable and fun. For example, did you know you can also ReGROW romaine lettuce or celery hearts? Just like scallions, cut off the bottom base of the head, place it in a shallow bowl of water, and watch it sprout. After a week or two, once you see new leaves and some roots, you can even plant it in a small pot with soil to keep it growing longer. Garlic cloves are another fantastic option; just stick them root-side down in a pot of soil, and you’ll get lovely green garlic shoots perfect for cooking. No need for a huge garden! Beyond scraps, there are plenty of other plants that thrive IN THE WINDOW. Many herbs are perfect for indoor growing. Basil, mint, and cilantro can be started from seeds or small nursery plants and will happily grow on a sunny windowsill. I find that having fresh herbs handy makes cooking so much more enjoyable. Just make sure they get enough light and don't let the soil dry out completely. And for those wondering how to grow bamboo indoors in water, it's surprisingly easy and adds a touch of zen to any room. Lucky bamboo isn't technically bamboo but a type of Dracaena, and it's incredibly resilient. You can buy stalks from most plant stores. To grow them, simply place the bottom of the stalks in a vase or decorative container filled with distilled or filtered water (tap water often contains chlorine that can harm them). Make sure at least one node (the ridged part on the stem) is submerged. Change the water weekly to prevent algae and keep it fresh. They do best in bright, indirect light – direct sunlight can scorch their leaves. My lucky bamboo has been thriving for months, requiring minimal effort but offering maximum green cheer! My goal is to fill my window sills with useful, beautiful plants. It's so rewarding to watch them grow and use them in my cooking. I'm excited to try aloe next, and who knows what other indoor gardening adventures await!
