For example, celery and green onions are incredibly easy to regrow by placing their root ends in a shallow dish of water. Within a few days, roots and new green shoots will begin to appear. Once they establish a good root system, transferring them to nutrient-rich soil helps them thrive further. I found basil to respond well when pinned in water, producing fresh leaves that can be harvested repeatedly. Garlic is another excellent choice for a window garden. You can plant individual cloves in soil and watch green shoots emerge, which not only make your kitchen lively but provide fresh herbs for cooking. Sprouting potatoes also offer an exciting option — when they start growing eyes, plant them directly in soil for a small but productive harvest. Ensuring your windowsill gets plenty of indirect sunlight is crucial for healthy growth. I recommend rotating your pots occasionally to ensure all sides receive light. Regular watering and occasional feeding with organic fertilizer can dramatically improve plant health. The beauty of regrowing root vegetables from scraps is that it reduces waste and provides fresh ingredients year-round.
