Vegan/Gluten-Free (VERY!!) Spicy Ramen

I went back to Aldi with one of my missions being to find new pasta and noodle alternatives. I prefer fully plant-based options like zoodles or sweet potato noodles so when I found hearts of palm noodles in an easily heatable pouch I immediately thought YAY ramen!!!

🥑Noodles: So for those who don’t know, hearts of palm are vegetables from palm trees! They are starchy and kind of reminded me of artichokes. Their consistency was a little tougher and heartier than I thought for noodles but it definitely filled me up and acted as a good filler for this ramen soup.

🥑Spicy broth: For the broth I actually added the noodles to the pot first with a TINY bit of the liquid it came with in the package to get them heated up early. I added: sriracha, Asian barbecue sauce, and one packet of ramen seasoning. Then I added about 3 cups of water to the heated mixture and stirred until simmering! I added the yum yum sauce last to cool it off a bit and it added a nice creaminess to the sauce, toning down the spice.

It took me all of 12 minutes or less to make this and it was SOOO good! Definitely play with blends of sauces like teriyaki, soy, hoisin, and other favorite Ramen flavors!
