Curry Salmon & Garlic Butter Cauliflower Rice with Jerk Spinach Sauce…

Ingredients

For the Curry Salmon

• 1 salmon filet

• 1 tsp curry powder

• ½ tsp garlic powder

• ½ tsp onion powder

• ½ tsp chili powder

• ½ tsp Tony’s Spice & Herb seasoning

• ¼ tsp sea salt

• ¼ tsp mango pepper (or substitute with a sweet chili seasoning)

• ½ tsp lemon pepper

• 1–2 tsp cooking oil (for searing)

For the Garlic Butter Cauliflower Rice

• 1 cup frozen cauliflower rice (pre-made or store-bought)

• 1 tbsp garlic butter

• 1–2 tsp leftover pan oil/juices from cooked salmon

• ½ tsp Tony’s Spice & Herb seasoning

For the Jerk Spinach Sauce

• 1 cup fresh spinach

• 1 tbsp butter

• 1½ tbsp Grace Jerk Seasoning

• 2 tbsp sour cream

• 2 oz milk (divided: ½ oz for cooking, 1½ oz for blending)

• ½ tsp Tony’s Spice & Herb seasoning

Instructions

1. Prepare the Curry Salmon

1. Pat the salmon filet dry and season both sides with curry powder, garlic powder, onion powder, chili powder, lemon pepper, mango pepper, sea salt, and Tony’s Spice & Herb.

2. Heat a pan over medium heat and add a small amount of oil.

3. Pan-sear the salmon skin-side down first, until crisp and golden. Flip and sear the other side until fully cooked. Set aside, reserving any leftover oil or juices in the pan.

2. Make the Garlic Butter Cauliflower Rice

1. In the same pan, add the garlic butter and heat until melted.

2. Add the frozen cauliflower rice and sauté until heated through and lightly browned.

3. Stir in the reserved salmon oil/juices for added flavor.

4. Season with Tony’s Spice & Herb to taste.

3. Blend the Jerk Spinach Sauce

1. In a small pan, melt 1 tbsp of butter over medium heat.

2. Add the spinach, ½ oz of milk, Grace Jerk Seasoning, and Tony’s Spice & Herb. Cook until the spinach is wilted and well-seasoned.

3. Transfer the cooked spinach mixture to a blender.

4. Add 2 tbsp of sour cream and the remaining 1½ oz of milk. Blend until smooth and creamy.

5. Pour into a container for serving.

To Serve

Plate the garlic butter cauliflower rice, top with the curry salmon, and drizzle generously with the jerk spinach sauce. Garnish with a lime wedge for brightness.
