Easy mini meat loaf muffins

Small servings of meatloaf !

Mini Muffin Meatloaf

Bake Time: 30 minutes

Oven Temp: 375°F (190°C)

Ingredients:

1 lb (450g) ground beef (crumbled)

1/2 cup finely diced onions

2 cloves garlic, finely diced (or 1 tsp minced garlic)

1/2 cup crushed crackers (about 10 saltines or similar)

1 egg

1 tbsp Worcestershire sauce (aka "whisker sauce")

1 tsp seasoning blend (like Italian seasoning, steak seasoning, or your favorite)

Salt & pepper to taste

1/3 cup ketchup

2 tbsp brown sugar

Instructions:

Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with mini muffin liners (optional for easy cleanup).

In a large bowl, combine:

Ground beef

Diced onions

Garlic

Crushed crackers

Egg

Worcestershire sauce

Seasoning

A pinch of salt & pepper

Mix until just combined—don’t overmix to keep it tender.

Scoop mixture into each muffin cup, pressing gently to fill but not pack too tightly.

In a small bowl, mix:

Ketchup

Brown sugar

Spoon a little of this glaze on top of each meatloaf.

Bake in preheated oven for 30 minutes, or until internal temperature reaches 160°F (71°C) and tops are caramelized.

Cool slightly, then remove from muffin tin. Serve warm with mashed potatoes, veggies, or on their own!
