Higher protein chicken spaghetti
Lower calorie and higher protein chicken spaghetti recipe
70 grams of protein per 20 oz portion
INGREDIENTS
2 pounds boneless chicken thighs
14.5 oz protein pasta
2 cans fat free cream of chicken
10 oz plain Greek yogurt
1 can of rotel
2 cups shredded pepperjack
chicken taco seasoning (I used 1 on the chicken but I would add a second one in the sauce mixture next time)
INSTRUCTIONS
1️⃣boil noodles according to package directions. Preheat oven to 350°
2️⃣season chicken thighs with packet and air fry for 15 minutes, working in batches. Finely chop cooked chicken as it finishes
3️⃣mix together cream of chicken, yogurt, and rotel. Season with second seasoning packet if you’ve chosen to use another one.
4️⃣mix chopped chicken and cooked noodles into sauce mix and spread into 13X9 baking dish. Top with shredded cheese and bake until heated through and cheese is melted (around 20-30 minutes)
