5 Minute Happy Hour Snacks !!! This is one you NEED on the Easter Table

Deviled Pickle Martini Pickles (inspo from @The Food In My Beard )

Slice large dill pickles in half lengthwise and scoop slightly to create a little boat. Set aside and pat dry. OR serve on pickle chips OR hallow out your pickles as I did in the video!

To a bowl or jar, add:

3 hard boiled eggs

1/2 cup shredded cheddar

2 oz cream cheese

1–2 tbsp mustard

2–3 tbsp pickle juice

2 tbsp chopped pickles (or the insides you scooped out)

fresh dill

garlic powder + black pepper

Optional but highly recommended:

a small splash of gin + dry vermouth for that martini flavor

Blend with a hand immersion blender until smooth and creamy.

Transfer to a piping bag or ziploc, snip the corner, and pipe into your hollowed pickles.

Top with crispy bacon, paprika, fresh dill, salt + pepper.

Serve immediately with your favorite martini.

I recently tried making deviled pickle martini pickles by hollowing out large dill pickles and filling them with a creamy blend of hard-boiled eggs, shredded cheddar, cream cheese, and a splash of pickle juice. Adding fresh dill, garlic powder, and black pepper really enhances the flavor profile. What makes this snack stand out is the optional addition of a small amount of gin and dry vermouth, which truly captures the essence of a classic martini. If you enjoy cocktails, this makes a delightful pairing to serve alongside your favorite drink. During my last Easter gathering, these deviled pickle martini pickles disappeared quickly. I topped them with crispy bacon and a sprinkle of smoky paprika, which added a wonderful crunch and depth of flavor. They are not just easy to prepare — under 5 minutes with a hand blender — but also impressive-looking and delicious. For those who prefer a lighter option, serving the filling on pickle chips instead of hollowed pickles works well too and is great for a casual bite. This recipe also accommodates any leftover pickle insides, reducing waste and maximizing flavor. This snack can serve as a perfect conversation starter or a unique twist on traditional hors d'oeuvres. Its balance of creamy, tangy, and slightly boozy notes makes it ideal for both family celebrations and adult happy hours. I highly recommend experimenting with different types of mustard or adding a pinch of smoked salt to customize the taste to your preference. Overall, these deviled pickle martini pickles offer a bold, flavorful bite that’s both satisfying and innovative — a must-try for anyone looking to elevate their snack game this Easter or any festive occasion.
