410 g water
50 g boiling water to mix with 25 g flour from above
9 g yeast
9 g sea salt
10 g lemon juice (makes it softer)
This was mixed in the Bosch universal for several minutes and then left to rest for 10-15 minutes before mixing another minute.
Clock stretch and folds were done, and the dough was smooth, strong and stretchy.
What I would do next time? Lamination of the dough before considering other stretch and folds. Still, this is a gorgeous and soft loaf. Leave cut side down on the counter and the crust gets crunchy while keeping the inside super soft.
