The other day I made banana bread with pecans in it. The recipe I followed was:
1¾ cups Harvest H&R All-Purpose Flour
¾4 tsp. Baking Soda
¼ tsp. Salt
1 cup Sugar
1 tbsp. Pumpkin Pie Spice
⅔ cup Vegetable Oil
3 Tbsp. Milk
1 cup (2 large) Mashed Bananas
½ cup Chopped Nuts
2 Eggs
Mix together flour, baking soda, salt and sugar. Blend in eggs, oil and mik. Stir in banana and nuts.
Pour batter into greased 8½2 x 4 ½ x 2½ inch pan. Bake at 350F for approximately 1 hour or until toothpick inserted in center of loaf comes out cleaned.
Turned out great. I did substitute coconut oil for the vegetable oil and the pumpkin pie spice wasn’t originally in it. 10/10 recommend.
... Read moreHey everyone! You know how much I loved sharing my banana bread recipe the other day, especially since it turned out with that absolutely gorgeous golden crust and the perfect, signature crack on top. I’ve had so many of you asking how to achieve that bakery-worthy look at home, so I wanted to share some of my favorite tips and tricks to make sure your homemade banana bread always comes out looking and tasting incredible, complete with that beautiful golden-brown crust and slight crack on top!
First, let’s talk about that irresistible golden-brown crust. It’s not just about aesthetics; it adds so much to the flavor and texture! One key player here is sugar. Beyond just sweetness, sugar caramelizes during baking, which directly contributes to that beautiful golden hue. So, while you might be tempted to cut back on sugar, remember it's essential for browning. Also, ensure your oven temperature is accurate. A reliable oven thermometer can be a game-changer! Baking at the recommended 350°F (just like in my recipe) allows for optimal browning without burning. Another small detail: the type of fat you use can influence browning. I swapped vegetable oil for coconut oil, and fats help conduct heat, resulting in a richer, more even color. If you notice one side of your loaf browning faster, don't hesitate to rotate your pan halfway through baking for an evenly golden crust.
Now, onto that delightful signature crack on top. Many people wonder how to get it, and honestly, it’s often a sign of a perfectly baked, well-risen loaf! The crack happens because the crust sets fairly quickly in the oven, but the batter underneath continues to rise and expand. When the internal pressure builds, the path of least resistance is usually right down the middle, causing that iconic split. To encourage a nice crack, try not to overmix your batter. Overmixing develops gluten, which can make the bread tougher and less likely to crack naturally. You want to mix just until the ingredients are combined. Also, ensure your pan is adequately filled. A good amount of batter allows for significant 'oven spring'—that initial rapid rise when the loaf hits the hot oven—which creates the tension needed for a good crack. Don't worry if your crack isn't perfectly symmetrical; it's all part of the charm of homemade bread with nuts!
Beyond these specific tips, here are a few more general pointers I follow that contribute to making truly delicious homemade banana bread that gets those "Good VIBES" going:
Super Ripe Bananas are a Must: This is non-negotiable for flavor and moisture. The spottier, the better! They’re sweeter and easier to mash.
Pan Preparation: Always grease and flour your pan, or line it with parchment paper for easy removal. This ensures your beautiful crust doesn't stick.
Resist the Urge to Peek: Avoid opening the oven door too frequently, especially during the first 30-40 minutes. Fluctuations in temperature can affect the rise and potentially prevent that perfect crack.
Cooling Patience: Once your toothpick comes out clean, let the banana bread cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely. This prevents it from becoming soggy and helps it hold its shape.
Customize with Care: While my recipe includes pecans, feel free to experiment with other nuts or even chocolate chips if you like! The pumpkin pie spice I added was a last-minute decision, but it truly elevated the cozy flavor.
Following these steps will help you consistently achieve a moist, flavorful loaf with that beautiful golden-brown crust and the desired slight crack on top. Happy baking, everyone! Enjoy sharing your perfect loaves!
