This is your sign that one meal can easily turn into TWO with zero extra effort. Super customizable depending on what’s in your cabinet!

Meal 1: Taco Bowls

Start with 1 lb of meat (I used chicken), 1 can of beans, taco seasoning, and rice seasoned how you like. Cook the chicken, then mix in the beans while it’s cooking—this keeps everything super juicy, flavorful, and helps the protein stretch further. Serve over rice and top with lettuce, cheese, and salsa.

Rough nutrition (per bowl if split into 4 servings): ~450–500 calories, high protein, solid fiber from beans.

Meal 2: Leftover Baked Tacos 🌮

Take leftover chicken, beans, rice, and cheese and load into hard taco shells. Bake at 350°F for 6–10 minutes (or box instructions) until crispy and warm. Top with lettuce and salsa again for that fresh crunch.

Rough nutrition (2–3 tacos depending on filling): ~500–650 calories depending on portion and cheese.
