🍪Chickpea cookie dough | high protein high fiber | recipe below

Okay hear me out… chickpeas + chocolate chips = COOKIE DOUGH 🤯🍪

I KNOW it sounds questionable but this is actually so good 😭 It’s a high fiber, budget-friendly sweet treat that keeps you full way longer than regular desserts.

I used crushed Cheerios as my “flour” (inspired by @glutenfreerunner06) and sweetened it with a mix of sugar-free + 100% pure maple syrup so you can totally customize the sweetness. And the chocolate chips?? Measure those with your heart because we don’t restrict joy over here 💅

Takes 5 minutes, one blender, and pantry staples. Perfect for a quick snack, pregnancy craving, or late night sweet tooth. Don’t knock it till you try it 👀 🍪 Chickpea Chocolate Chip “Cookie Dough”

... Read moreIf you're looking for a nutritious dessert option that is both satisfying and easy to prepare, this chickpea cookie dough recipe hits all the marks. What I love most about this recipe is how it transforms simple pantry staples into something unexpectedly indulgent yet packed with health benefits. Chickpeas provide a great source of plant-based protein and fiber, which help keep you full longer and support digestion. Using crushed Cheerios as the “flour” is an ingenious twist that adds a bit of texture and keeps the recipe gluten-free if you choose gluten-free Cheerios. You can also swap in almond flour or oat flour depending on your dietary needs or preferences. The blend of sugar-free syrup and pure maple syrup allows you to control the sweetness perfectly without feeling guilty. For chocolate lovers, adding dark chocolate chips balances the snack with a touch of bitter richness, and the instruction to "measure with your heart" encourages freedom to enjoy without strict limitations. From my personal experience, chilling the cookie dough for a bit thickens the texture nicely, making it even more like traditional cookie dough. I’ve also tried variations adding a pinch of cinnamon or a sprinkle of sea salt on top, which elevates the flavor profile beautifully. This recipe is ideal for quick pregnancy cravings, late-night snacking, or whenever you want a healthier dessert option. Overall, it’s a creative way to incorporate more legumes into your diet without sacrificing enjoyment, making it a winner in my kitchen for both nutrition and taste.
